Ingredients
  

  • 12 oz (340 g) spaghetti or fettuccine
  • 4 oz (115 g) pancetta or bacon, diced
  • 2 large eggs + 1 egg yolk
  • 1 cup grated Parmesan or Pecorino Romano cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

  • Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  • In a skillet, cook pancetta or bacon until crispy. Add garlic and sauté briefly.
  • In a bowl, whisk together eggs, egg yolk, and cheese.
  • Add hot pasta to the skillet with bacon, then remove from heat.
  • Quickly pour in the egg-cheese mixture, tossing continuously. Add reserved pasta water gradually until creamy.
  • Season with black pepper and garnish with parsley.

Notes

  • Use freshly grated cheese for the best flavor and smooth texture.
  • Add pasta water slowly to avoid scrambling the eggs.
  • For extra richness, add a splash of heavy cream (optional).
  • Substitute pancetta with turkey bacon for a lighter version.
  • Serve immediately for the best creamy consistency.
