Ingredients
  

For the Soup

  • 3 tablespoons unsalted butter
  • 3 large leeks, white and light green parts only, thoroughly cleaned and sliced
  • 1 medium yellow onion, chopped
  • 2 pounds Yukon Gold or russet potatoes, peeled and cut into chunks
  • 6 cups vegetable broth or chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • ½ teaspoon freshly ground black pepper
  • 1 cup heavy cream

  • 1 teaspoon fresh thyme leaves

Instructions
 

Prepare the Leeks

  • Trim away the dark green tops and the root ends of the leeks.
    Slice the white and light green portions into thin rounds.
    Place the sliced leeks in a large bowl of cold water and gently separate the layers with your fingers.
    Allow any dirt and grit to sink to the bottom, then lift the leeks from the water and drain thoroughly.

Prepare the Potatoes

  • Peel the potatoes and cut them into evenly sized chunks.
    Try to keep the pieces similar in size so they cook at approximately the same rate.

Sauté the Leeks and Onion

  • Melt the butter in a large heavy-bottomed pot or Dutch oven over medium heat.
    Add the sliced leeks and chopped onion.
    Cook gently for approximately 7–10 minutes, stirring occasionally, until the vegetables become soft and fragrant.
    Avoid browning them heavily because the goal is to develop their delicate sweetness.

Add the Garlic

  • Add the minced garlic.
    Cook for another 30–60 seconds, stirring continuously.
    Be careful not to burn the garlic because it can make the soup taste bitter.

Add the Broth and Seasonings

  • Pour in the vegetable or chicken broth.
    Add the dried thyme, bay leaf, salt, and black pepper.
    Stir everything together

Remove the Bay Leaf

  • Turn off the heat.
    Carefully remove and discard the bay leaf.
    Allow the soup to cool slightly before blending.

Add the Cream

  • Return the blended soup to low heat if necessary.
    Slowly stir in the heavy cream.
    Heat gently for approximately 2–3 minutes.
    Do not allow the soup to boil vigorously after adding the cream.

Garnish and Serve

  • Ladle the hot soup into serving bowls.
    Garnish with fresh parsley, thyme leaves, homemade croutons, a drizzle of cream, or freshly cracked black pepper.
    Serve immediately with warm crusty bread or garlic toast.

Notes

  • Clean the leeks carefully: Leeks often contain dirt between their layers, so washing them thoroughly is important.
  • Potatoes: Yukon Gold potatoes create an especially creamy texture, while russet potatoes produce a thicker, starchier soup.
