Ingredients
  

  • 5 pounds pork chitterlings, thoroughly cleaned
  • 1 large onion, chopped
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Creole seasoning
  • ½ teaspoon cayenne pepper
  • 8 cups water
  • Hot sauce for serving
  • Fresh parsley for garnish

Instructions
 

  • Thoroughly clean the chitterlings under cold running water.
  • Remove excess fat and any unwanted material.
  • Soak in cold water and vinegar for 20 minutes.
  • Rinse several times until completely clean.
  • Place chitterlings in a large stockpot.
  • Add onions, bell pepper, celery, garlic, and seasonings.
  • Pour in water until the ingredients are covered.
  • Bring to a boil over medium-high heat.
  • Reduce heat to low and cover.
  • Simmer for 3–3½ hours until tender.
  • Garnish with parsley and serve hot with rice or cornbread.
