Ingredients
  

For the Crêpes

  • 1 cup all-purpose flour
  • 2 eggs
  • 1¼ cups milk
  • 1 tbsp melted butter
  • 1 tsp sugar
  • Pinch of salt

For the Suzette Sauce

  • ½ cup unsalted butter
  • ½ cup sugar
  • Zest of 1 orange
  • Juice of 2 oranges
  • 2 tbsp Grand Marnier or Cointreau
  • 1 tbsp lemon juice

Instructions
 

  • In a bowl, whisk flour, eggs, milk, sugar, and salt to form a smooth batter.
  • Heat a pan and lightly grease it. Pour thin layers to make crêpes. Cook both sides lightly and set aside.
  • In a skillet, melt butter and sugar until slightly caramelized.
  • Add orange zest, orange juice, and lemon juice. Simmer gently.
  • Fold crêpes into quarters and place them in the sauce.
  • Warm gently, then add liqueur and flambé carefully.
  • Spoon sauce over the crêpes and serve immediately.

  • Use fresh oranges for the best flavour.
  • Do not overcook the sauce—it should remain silky.
  • Flambé carefully away from open flames.
  • Crêpes can be made ahead of time.
