Ingredients
  

  • 1 pizza dough (store-bought or homemade)
  • 2 medium potatoes, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp garlic, minced
  • 1 tsp dried oregano
  • 1 tsp fresh rosemary, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and black pepper to taste
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp cornmeal (for the baking sheet, optional)

Instructions
 

  • Preheat the oven: Set your oven to 450°F (230°C). If using a pizza stone, place it inside to heat up.
  • Prepare the potatoes: Thinly slice the potatoes and soak them in cold water for 10 minutes. Drain and pat dry with a paper towel.
  • Roll out the dough: On a floured surface, roll out the pizza dough into a thin circle or rectangle. Transfer it to a baking sheet dusted with cornmeal.
  • Assemble the pizza: Brush the dough with olive oil and spread the minced garlic over it. Arrange the potato slices evenly, slightly overlapping them. Sprinkle with salt, black pepper, oregano, and rosemary.
  • Add cheese: Evenly distribute the mozzarella and Parmesan cheese on top of the potatoes.
  • Bake: Transfer the pizza to the oven and bake for 20-25 minutes, or until the crust is golden brown and the potatoes are crispy.
  • Serve: Let the pizza cool for a few minutes, then slice and enjoy!

Notes

  • For extra crispiness, use a pizza stone and preheat it before baking.
  • Add caramelized onions for a richer flavor.
