Ingredients
  

For the Chicken:

  • 2 large boneless, skinless chicken breasts (halved lengthwise)
  • Salt and black pepper (to taste)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon milk
  • 1 cup breadcrumbs (Italian seasoned preferred)
  • ½ cup grated Parmesan cheese
  • Olive oil (for frying)

For the Topping:

  • 1½ cups marinara sauce
  • 1½ cups shredded mozzarella cheese
  • Fresh basil leaves (optional)
  • Extra grated Parmesan (optional)

Instructions
 

  • Pound the chicken breasts to an even thickness. Season both sides with salt and pepper.
  • Place flour in one bowl.Whisk eggs with milk in a second bowl.Mix breadcrumbs with grated Parmesan in a third bowl.
  • Dredge each piece in flour, dip into egg mixture, then coat thoroughly in breadcrumb mixture.
  • Heat olive oil in a skillet over medium heat. Fry chicken until golden brown on both sides (about 3–4 minutes per side). Remove and place on paper towels.
  • Preheat oven to 400°F (200°C). Place fried chicken in a baking dish. Spoon marinara sauce over each piece. Top generously with mozzarella cheese.
  • Bake for 15–20 minutes until cheese is melted and bubbly.
  • Top with fresh basil and extra Parmesan. Serve hot.

  • Use freshly grated Parmesan for best flavour.
  • Don’t overcrowd the pan while frying.
  • Pound chicken evenly for uniform cooking.
  • Let fried chicken rest before baking.
