A Crispy Fried Cod Sandwich with golden, crunchy cod fillets, creamy tartar sauce, and fresh toppings served on a toasted bun

- 2 cod fillets (about 200g each)
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp cayenne pepper (optional for spice)
- 1 egg
- 1/2 cup buttermilk
- 1 cup panko breadcrumbs
- Vegetable oil (for frying)
- 2 sandwich buns
- 2 tbsp tartar sauce
- 1/2 cup lettuce (shredded)
- 4 pickle slices
- 1/2 lemon (for garnish)
Heat vegetable oil in a deep pan to 180°C (350°F).
In one bowl, mix flour, cornmeal, paprika, garlic powder, black pepper, salt, and cayenne pepper.
In another bowl, whisk egg and buttermilk together.
Dip each cod fillet into the flour mixture, then into the egg mixture, and finally coat it with panko breadcrumbs.
Carefully place the coated fillets into the hot oil and fry for 4-5 minutes per side until golden and crispy.
Remove and drain on a paper towel.
Toast the sandwich buns lightly.
Spread tartar sauce on the buns and place the crispy cod fillets on top.
Add shredded lettuce, pickle slices, and a squeeze of lemon.
Serve immediately and enjoy!

For extra crunch, double coat the fillets with panko breadcrumbs.
