Ingredients
  

  • 2 cod fillets (about 200g each)
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper (optional for spice)
  • 1 egg
  • 1/2 cup buttermilk
  • 1 cup panko breadcrumbs
  • Vegetable oil (for frying)
  • 2 sandwich buns
  • 2 tbsp tartar sauce
  • 1/2 cup lettuce (shredded)
  • 4 pickle slices
  • 1/2 lemon (for garnish)

Instructions
 

  • Heat vegetable oil in a deep pan to 180°C (350°F).
  • In one bowl, mix flour, cornmeal, paprika, garlic powder, black pepper, salt, and cayenne pepper.
  • In another bowl, whisk egg and buttermilk together.
  • Dip each cod fillet into the flour mixture, then into the egg mixture, and finally coat it with panko breadcrumbs.
  • Carefully place the coated fillets into the hot oil and fry for 4-5 minutes per side until golden and crispy.
  • Remove and drain on a paper towel.
  • Toast the sandwich buns lightly.
  • Spread tartar sauce on the buns and place the crispy cod fillets on top.
  • Add shredded lettuce, pickle slices, and a squeeze of lemon.
  • Serve immediately and enjoy!

Notes

  • For extra crunch, double coat the fillets with panko breadcrumbs.
  • Use fresh cod for the best texture and flavor.
