Ingredients
  

For the Karaage Chicken:

  • 500 g boneless chicken thighs, cut into pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sake (or rice vinegar)
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • ½ teaspoon sugar
  • ½ cup potato starch or cornstarch
  • Oil, for deep frying

For the Sandwich:

  • Burger buns or brioche buns
  • Shredded cabbage or lettuce
  • Sliced cucumber or pickles

Instructions
 

  • In a bowl, mix soy sauce, sake, ginger, garlic, and sugar.
  • Add chicken and marinate for at least 30 minutes.
  • Heat oil to 170–180°C (340–355°F).
  • Coat marinated chicken lightly with potato starch.
  • Fry chicken in batches until golden and crisp.
  • Drain on paper towels.
  • Toast buns lightly.
  • Assemble sandwich with chicken, vegetables, and sauce.
  • Serve immediately.
