Ingredients
  

For Sushi Rice:

  • 2 cups cooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt

For Crispy Rice Base:

  • 2–3 tbsp oil (for frying)
  • 200g fresh tuna (finely diced)
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp sesame oil

Instructions
 

  • Mix warm sushi rice with vinegar, sugar, and salt.
  • Spread rice evenly in a lined tray (about 1-inch thick).
  • Refrigerate for 20–30 minutes until firm.
  • Cut into small rectangles or squares.
  • Heat oil in a pan and fry rice pieces until golden and crispy on both sides.
  • Remove and place on paper towels to drain excess oil.
  • Top each crispy rice piece with the spicy tuna mixture.
  • Garnish with avocado slices, jalapeños, or sesame seeds.
  • Serve immediately.
