Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts
  • 1 cup Caesar dressing
  • ½ cup chicken broth
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ cup grated Parmesan cheese
  • 8 ounces penne or rotini pasta
  • ½ cup sour cream or cream cheese (optional for extra creaminess)
  • Fresh parsley for garnish

Instructions

  • Place chicken breasts in the Crock Pot.
  • Pour Caesar dressing and chicken broth over the chicken.
  • Add garlic powder, onion powder, and black pepper.
  • Cover and cook on low for 5–6 hours or high for 3 hours until the chicken is tender.
  • Remove chicken, shred it using two forks, and return it to the pot.
  • Stir in Parmesan cheese and sour cream (if using).
  • Cook pasta separately according to package directions and drain.
  • Add cooked pasta to the slow cooker and stir to combine.
  • Let it sit for 10 minutes on warm to absorb flavors.
  • Garnish with parsley and extra Parmesan before serving.

Notes

  • Use Caesar dressing with a bold flavor for the best taste.
  • Don’t overcook the pasta; it should be slightly firm before mixing.
  • You can use whole wheat or gluten-free pasta as alternatives.
  • For a lighter version, use low-fat Caesar dressing and Greek yogurt instead of sour cream.
  • Leftovers can be refrigerated for up to three days and reheated easily.
