Ingredients
  

  • 3-4 lb pork shoulder or pork loin
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp smoked paprika (optional)
  • 1 cup chicken or beef broth
  • 2 tbsp Worcestershire sauce
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 3 carrots, chopped (optional)
  • 3 potatoes, chopped (optional)

Instructions
 

  • Season the pork – Rub the pork roast with salt, pepper, garlic powder, onion powder, thyme, and smoked paprika.
  • Sear the roast (optional) – In a pan, heat olive oil over medium-high heat and sear the pork for 2-3 minutes per side until golden brown. This enhances the flavor.
  • Prepare the slow cooker – Place the sliced onions, garlic, carrots, and potatoes at the bottom of the crock pot.
  • Add the pork roast – Place the seasoned pork on top of the vegetables.
  • Pour in the broth – Add chicken or beef broth and Worcestershire sauce to keep the meat moist.
  • Slow cook – Cover and cook on low for 8-10 hours or high for 4-5 hours until the pork is fork-tender.
  • Shred or slice – Remove the pork and let it rest for a few minutes. Shred it with forks or slice as desired.
  • Serve & enjoy – Serve with the cooked vegetables and drizzle with the flavorful crock pot juices.

Notes

  • Best cuts of pork: Pork shoulder or pork butt is ideal for this recipe as they become more tender with slow cooking. Pork loin works too but may be leaner.
  • Searing for extra flavor: Browning the pork before slow cooking adds depth to the taste, but it’s optional.
  • Thickening the sauce: If you want a thicker gravy, remove the liquid and whisk it with cornstarch in a saucepan until thickened.
