Ingredients

  • 1 small onion, chopped
  • 1 lb ground beef or Italian sausage
  • 3 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups low-sodium beef or chicken broth
  • 1 teaspoon dried basil
  • ½ cup shredded mozzarella cheese
  • 8 lasagna noodles, broken into pieces
  • ¼ cup grated Parmesan cheese

Instructions

Cook the Meat:

  • In a skillet over medium heat, brown the ground beef with onion and garlic until cooked through. Drain any excess grease.

Add to the Crockpot:

  • Transfer the cooked meat mixture to the slow cooker. Add marinara sauce, tomato sauce, diced tomatoes, broth, and seasonings. Stir to combine.

Slow Cook:

  • Cover and cook on low for 6–7 hours or high for 3–4 hours to allow flavors to blend.

Add the Noodles:

  • During the last 30 minutes of cooking, add the broken lasagna noodles. Stir occasionally to prevent sticking.

Prepare the Cheese Mixture:

  • In a small bowl, mix ricotta, mozzarella, and Parmesan cheese. Set aside.

Notes

  • Use Italian sausage for extra flavor and spice.
  • Add spinach or zucchini for added nutrition.
  • Break noodles into bite-sized pieces for easy eating.
  • Stir occasionally once noodles are added to prevent clumping.
  • Leftovers thicken overnight—add extra broth when reheating.
