For the Salad
- 2 pounds (900 g) baby Yukon Gold or red potatoes
- 2 celery stalks, finely diced
- 1 small cucumber, diced
- 1 red bell pepper, finely diced
- 1 medium carrot, grated
- ½ cup red onion, finely chopped
- 2 green onions, sliced
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
For the Creamy Dressing
- ½ cup mayonnaise
- ¼ cup plain Greek yogurt
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- 1 clove garlic, minced
- Freshly ground black pepper, to taste
Wash the potatoes thoroughly and cut any large potatoes into bite-sized pieces.
Place the potatoes in a large pot of salted water and bring to a boil.
Cook for 15–20 minutes until fork-tender but still firm.
Drain and allow the potatoes to cool slightly.
In a large bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, apple cider vinegar, honey, garlic, salt, and pepper.
Add the potatoes, celery, cucumber, bell pepper, carrot, red onion, green onions, parsley, and dill.
Gently fold until all the ingredients are evenly coated with the dressing.
