Ingredients
  

  • 700g beef flank steak or brisket
  • 1 tbsp olive oil
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 4 cloves garlic (minced)
  • 1 can (400g) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp cumin
  • 2 tbsp olives (sliced)
  • 1 tbsp capers (optional)
  • 1 tbsp vinegar or lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Season the beef with salt and pepper.
  • Heat olive oil in a large pot and sear the beef on both sides.
  • Remove beef and sauté onions, bell peppers, and garlic until soft.
  • Add crushed tomatoes, tomato paste, beef broth, cumin, paprika, and oregano.
  • Return beef to the pot and cover.
  • Remove beef and shred using two forks.
  • Return shredded beef to the sauce.
  • Add olives, capers, and vinegar or lime juice.
  • Garnish with fresh cilantro and serve hot.
