  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 celery stalks, sliced
  • 2 medium carrots, sliced
  • 2 medium potatoes, peeled and cubed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 8 cups chicken broth
  • 500 g bone-in chicken thighs or breasts
  • 1 ear corn, cut into rounds or 1 cup corn pieces
  • 1/2 cup tomato sauce
  • 1/2 cup uncooked rice or thin noodles
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh cilantro or parsley, chopped

Instructions
 

  • Heat the olive oil in a large soup pot over medium heat.
  • Add the onion, garlic, and green bell pepper, then sauté until softened and fragrant.
  • Stir in the celery, carrots, and potatoes, and cook for a few minutes.
  • Add the cumin, oregano, and bay leaf, stirring well to coat the vegetables.
  • Pour in the chicken broth and tomato sauce, then add the chicken pieces.
  • Bring the soup to a boil, then reduce the heat and simmer for about 25 minutes.
  • Remove the chicken, shred or chop it, and return it to the pot.
  • Season with salt and black pepper to taste.
  • Add the corn and rice or noodles, then continue simmering until the rice is tender or the noodles are cooked.
  • Stir in the fresh cilantro or parsley and lime juice just before serving.
  • Ladle into bowls and serve warm.
