- 8 cups chicken broth
- 500 g bone-in chicken thighs or breasts
- 1 ear corn, cut into rounds or 1 cup corn pieces
- 1/2 cup tomato sauce
- 1/2 cup uncooked rice or thin noodles
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh cilantro or parsley, chopped
Heat the olive oil in a large soup pot over medium heat.
