Ingredients

Dry Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) packed brown sugar
  • 2 large eggs, at room temperature
  • ½ cup (120 g) plain yogurt or sour cream
  • 1 teaspoon vanilla extract

Fresh Apple Mixture

  • 2 medium apples, peeled if desired, cored, and diced
  • 1 teaspoon lemon juice

Instructions

  • Preheat your oven to 350°F (175°C). Grease a standard 9 × 5-inch loaf pan with butter or nonstick cooking spray, then line it with parchment paper if desired.
Leave a little parchment overhanging the sides so you can lift the finished loaf out easily.
  • Wash, core, and dice the apples into small, evenly sized pieces. You may peel them for a softer texture or leave the skins on for additional color and texture.
Toss the apple pieces with lemon juice to help prevent browning. Firm varieties such as Granny Smith, Honeycrisp, Braeburn, or Pink Lady work particularly well.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Mixing these ingredients separately helps distribute the leavening agents and spices evenly throughout the loaf.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy, about 2–3 minutes.
Add the eggs one at a time, beating after each addition. Stir in the vanilla extract until well combined.
  • Mix the yogurt or sour cream into the butter mixture. Add the dry ingredients gradually, stirring gently until just combined.
Avoid overmixing the batter, as excessive stirring can make the bread dense rather than soft and tender.
  • Gently fold the chopped apples into the batter using a spatula. Add the chopped walnuts, pecans, or raisins if desired.
The batter should be thick enough to support the apple pieces without allowing them all to sink to the bottom.
  • Spoon the batter into the prepared loaf pan and spread it evenly. If desired, combine the additional brown sugar and cinnamon, then sprinkle the mixture over the top for a lightly crunchy finish.
Tap the pan gently on the counter to release any large air pockets.
  • Place the loaf pan on the center rack of the preheated oven. Bake for 50–60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
If the top browns too quickly, loosely cover it with aluminum foil during the final part of baking.
Because apples release moisture as they cook, avoid judging doneness by the color of the crust alone.
  • Remove the pan from the oven and let the bread cool for 15 minutes. Carefully lift it out and transfer it to a wire rack to cool further.
Allowing the loaf to cool helps the crumb set, making it easier to cut neat slices without crumbling.
  • Whisk the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Add a few extra drops of milk if necessary to reach a drizzle-friendly consistency.

Notes

  • Choose firm apples: Firm varieties hold their shape and provide a pleasant texture after baking.
  • Cut apples evenly: Small, uniform pieces distribute throughout the loaf and soften consistently.
  • Measure flour accurately: Spoon flour into the measuring cup and level it off rather than packing it tightly.
  • Use room-temperature ingredients: Eggs, yogurt, and softened butter combine more smoothly when they are not very cold.
  • Avoid overmixing: Stir just until the ingredients are combined to help keep the loaf tender
  • Check the center carefully: Insert a toothpick into the center of the loaf, avoiding a large apple piece that could make the result appear wetter than the surrounding crumb.
  • Allow enough cooling time: Slicing the loaf while it is very hot can cause the moist interior to crumble.
  • Store it safely: Once completely cooled, keep the bread covered in the refrigerator because it contains fresh fruit and yogurt.
