Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs (or crushed chocolate cookies)
  • 6 tbsp unsalted butter, melted
  • ¼ cups granulated sugar

For the Chocolate Silk Filling:

  • 4 oz unsweetened chocolate, melted and slightly cooled
  • 1 cups unsalted butter, softened
  • 1 ¼ cups granulated sugar
  • 2 tsp vanilla extract
  • 4 large eggs (pasteurized)

For the Whipped Topping:

  • 1 ½ cups cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Chocolate shavings or cocoa powder (for garnish)

Instructions
 

Step 1: Prepare the Crust

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  • Press mixture firmly into the bottom of a 9x9-inch baking pan.
  • Bake for 10 minutes, then let cool completely.

Step 2: Make the Chocolate Silk Filling

  • Melt unsweetened chocolate and let it cool slightly.
  • In a large bowl, beat butter and sugar on high speed until light and fluffy (about 3-5 minutes).
  • Mix in melted chocolate and vanilla extract until smooth.
  • Add eggs one at a time, beating for 2-3 minutes after each addition. (This step creates the silky texture.)
  • Spread the chocolate mixture evenly over the cooled crust.

Step 3: Make the Whipped Topping

  • In a clean bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Spread the whipped cream over the chocolate layer.
  • Garnish with chocolate shavings or a dusting of cocoa powder.

Step 4: Chill & Serve

  • Refrigerate for at least 4 hours before

Notes

  • Use Pasteurized Eggs: Since the eggs are not cooked, pasteurized eggs ensure safety.
  • Let the Chocolate Cool: Hot melted chocolate can affect the texture, so let it cool slightly before mixing.
