Ingredients
  

For the Sushi Rice

  • 2 cups Japanese short-grain sushi rice
  • 2¼ cups water
  • ¼ cup rice vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt

For the Crab Mixture

  • 300 g cooked crab meat or imitation crab
  • 3 tablespoons mayonnaise
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • ½ teaspoon sesame oil
  • 1 tablespoon finely chopped green onion
  • ½ teaspoon lemon juice

For the Bowl

  • 1 ripe avocado, diced or sliced
  • 1 small cucumber, diced
  • 2 sheets nori, cut into thin strips or crumbled
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, thinly sliced
  • 1 tablespoon pickled ginger, optional
  • ½ cup shelled edamame, optional
  • Spicy mayonnaise

Instructions
 

Rinse the Sushi Rice

  • Place the sushi rice in a large bowl.
    Cover it with cold water and gently swirl the rice with your fingers.
    Drain the cloudy water.
    Repeat several times until the water becomes mostly clear.
    Allow the rice to drain for approximately 10–15 minutes.

Cook the Rice

  • Transfer the rinsed rice and water to a rice cooker or saucepan.
    Cook according to the rice package instructions.
    Once cooked, allow the rice to rest for about 10 minutes with the lid closed.

Prepare the Sushi Seasoning

  • Combine rice vinegar, sugar, and salt in a small saucepan.
    Warm gently until the sugar and salt dissolve.
    Do not boil.
    Allow the mixture to cool slightly.

Season the Rice

  • Transfer the warm cooked rice to a wide, shallow bowl.
    Pour the seasoned vinegar over the rice.
    Gently fold it into the rice using a rice paddle or spatula.
    Use cutting motions rather than vigorous stirring.
    Allow the seasoned rice to cool to room temperature.

Prepare the Crab

  • If using imitation crab, shred the crab sticks into small pieces.
    If using cooked crab meat, check carefully for any remaining shell pieces.
    Place the crab in a bowl.
    Add mayonnaise, soy sauce, rice vinegar, sesame oil, lemon juice, and green onion.
    Add sriracha if you want a spicy California roll flavor.
    Mix gently until creamy and well combined.

Prepare the Vegetables

  • Dice the cucumber into small pieces.
    Cut the avocado into cubes or thin slices.
    Slice the green onions.
    If using edamame, prepare it according to the package instructions and allow it to cool.

Prepare the Nori

  • Using kitchen scissors, cut the nori into thin strips.
    You can also crumble the nori into small pieces.
    This makes it easy to distribute the seaweed flavor throughout the bowl.

Assemble the Sushi Bowls

  • Divide the seasoned sushi rice between four serving bowls.
    Spread the rice evenly across the bottom.
    Add a generous spoonful of the creamy crab mixture to each bowl.

Add the Vegetables

  • Arrange avocado and cucumber over the crab and rice.
    Add edamame if using.
    For a restaurant-style presentation, arrange each ingredient in separate sections rather than mixing everything together.

Add the Nori

  • Scatter the sliced or crumbled nori over the top.
    The nori provides the characteristic roasted seaweed flavor associated with California rolls.

Add Sesame Seeds

  • Sprinkle toasted sesame seeds over each bowl.
    Furikake can also be added for additional Japanese-inspired flavor and texture.

Add Sauce

  • Drizzle spicy mayonnaise over the top.
    Add a small amount of soy sauce according to taste.
    If desired, serve with wasabi and pickled ginger on the side.

Add Crunch

  • For extra texture, sprinkle a small amount of tempura crumbs over the finished bowl.
    This creates a satisfying crunchy contrast with the creamy crab and avocado.

Serve

  • Serve the bowls immediately.
    For the best texture, keep the nori separate until serving if you want it to remain particularly crisp.
