Ingredients
  

  • 1 deer heart
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme (or 1/2 teaspoon dried)
  • 1 tbsp fresh rosemary (or 1/2 teaspoon dried)
  • Salt and pepper to taste
  • 1 tbsp butter
  • 1 tbsp balsamic vinegar (optional)

Instructions
 

  • Prepare the Heart:
    Clean the deer heart by removing any connective tissue, blood vessels, and excess fat. Slice the heart into thin medallions or leave it whole depending on your preference.
  • Marinate:
    In a bowl, mix olive oil, garlic, thyme, rosemary, salt, and pepper. Coat the heart pieces in the marinade and let them sit for 15 minutes.
  • Heat the Pan:
    Heat a skillet over medium-high heat. Add the butter and let it melt.
  • Cook the Heart:
    Add the heart medallions to the skillet. Cook for 2-3 minutes per side for medium-rare, or longer if you prefer well-done.
  • Optional Glaze:
    If using balsamic vinegar, add it to the pan during the last minute of cooking for a tangy glaze.
  • Rest and Serve:
    Remove from heat and let the meat rest for 5 minutes before serving. Garnish with fresh herbs if desired.
