For the Black Bean Filling
- 2 cans black beans, 15 ounces each, drained and rinsed
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup water or vegetable broth
- 1 tablespoon fresh lime juice
For the Burritos
- 6 large flour tortillas
- 2 cups cooked white or brown rice
- 1½ cups shredded cheddar or Monterey Jack cheese
- 1 cup salsa
- 1 avocado, diced
- ½ cup fresh cilantro, chopped
Drain and rinse the canned black beans.
Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3–4 minutes, until softened.
Add the black beans, cumin, chili powder, smoked paprika, oregano, salt, and black pepper.
Pour in the water or vegetable broth and stir well.
