Ingredients
  

For Marination:

  • 500 gram chicken (bone-in or boneless)
  • ½ cup yogurt
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp salt
  • 1 tsp garam masala
  • 1 tbsp ginger-garlic paste
  • 1 tsp lemon juice

For Gravy:

  • 2 tbsp oil or ghee
  • 1 bay leaf
  • 1 cinnamon stick
  • 2 cloves
  • 2 green cardamoms
  • 1 tsp cumin seeds
  • 2 onions (finely chopped)
  • 2 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • ½ cup water
  • ¼ cup fresh cream (optional)
  • Fresh coriander leaves (for garnish)

Instructions
 

Step 1: Marinate the Chicken

  • In a bowl, mix yogurt, red chili powder, turmeric, salt, garam masala, ginger-garlic paste, and lemon juice.
  • Add the chicken pieces and coat them well with the marinade.
  • Let it rest for at least 30 minutes for the flavors to infuse.

Step 2: Prepare the Gravy

  • Heat oil or ghee in a pan over medium heat.
  • Add bay leaf, cinnamon stick, cloves, cardamoms, and cumin seeds. Sauté for a few seconds until fragrant.
  • Add chopped onions and sauté until golden brown.
  • Stir in the ginger-garlic paste and cook until the raw smell disappears.
  • Pour in the tomato puree and cook for 5 minutes until the oil separates.
  • Add red chili powder, turmeric, coriander powder, cumin powder, and garam masala. Mix well.

Step 3: Cook the Chicken

  • Add the marinated chicken and mix well with the masala.
  • Cover and cook for 20-25 minutes, stirring occasionally.
  • Add water to adjust the consistency of the gravy.
  • Simmer for another 10 minutes until the chicken is fully cooked and tender.
  • Stir in fresh cream (optional) for a rich texture.

Step 4: Garnish & Serve

  • Sprinkle fresh coriander leaves on top.
  • Serve hot with rice, naan, or roti.

Notes

  • Marinate the chicken for at least 30 minutes to enhance the flavor.
  • Adjust spice levels as per your preference.
  • Adding fresh cream gives a richer taste, but it’s optional.
  • Bone-in chicken adds more flavor to the gravy.
