For Marination:
- 500 gram chicken (bone-in or boneless)
- ½ cup yogurt
- 1 tsp red chili powder
- ½ tsp turmeric powder
- 1 tsp salt
- 1 tsp garam masala
- 1 tbsp ginger-garlic paste
- 1 tsp lemon juice
For Gravy:
- 2 tbsp oil or ghee
- 1 bay leaf
- 1 cinnamon stick
- 2 cloves
- 2 green cardamoms
- 1 tsp cumin seeds
- 2 onions (finely chopped)
- 2 tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- ½ tsp garam masala
- ½ cup water
- ¼ cup fresh cream (optional)
- Fresh coriander leaves (for garnish)
Step 1: Marinate the Chicken
In a bowl, mix yogurt, red chili powder, turmeric, salt, garam masala, ginger-garlic paste, and lemon juice.
Add the chicken pieces and coat them well with the marinade.
Let it rest for at least 30 minutes for the flavors to infuse.
Step 2: Prepare the Gravy
Heat oil or ghee in a pan over medium heat.
Add bay leaf, cinnamon stick, cloves, cardamoms, and cumin seeds. Sauté for a few seconds until fragrant.
Add chopped onions and sauté until golden brown.
Stir in the ginger-garlic paste and cook until the raw smell disappears.
Pour in the tomato puree and cook for 5 minutes until the oil separates.
Add red chili powder, turmeric, coriander powder, cumin powder, and garam masala. Mix well.
Step 3: Cook the Chicken
Add the marinated chicken and mix well with the masala.
Cover and cook for 20-25 minutes, stirring occasionally.
Add water to adjust the consistency of the gravy.
Simmer for another 10 minutes until the chicken is fully cooked and tender.
Stir in fresh cream (optional) for a rich texture.
Step 4: Garnish & Serve
Sprinkle fresh coriander leaves on top.
Serve hot with rice, naan, or roti.
- Marinate the chicken for at least 30 minutes to enhance the flavor.
- Adjust spice levels as per your preference.
- Adding fresh cream gives a richer taste, but it’s optional.
- Bone-in chicken adds more flavor to the gravy.
