A delicious fusion of Mexican street corn and pizza, topped with roasted corn, creamy sauce, cotija cheese, and chili powder.

Ingredients
  

  • 1 pizza dough (store-bought or homemade)
  • 1 cup roasted or grilled corn kernels
  • 1/2 cup sour cream or Mexican crema
  • 1/2 cup mayonnaise
  • 1 lime, juiced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, thinly sliced (optional)
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven: Set your oven to 450°F (230°C). If using a pizza stone, place it inside to heat up.
  • Prepare the sauce: In a bowl, mix sour cream (or crema), mayonnaise, lime juice, garlic powder, chili powder, and smoked paprika.
  • Roll out the dough: On a floured surface, roll out the pizza dough into a thin circle or rectangle. Transfer it to a baking sheet or preheated pizza stone.
  • Assemble the pizza:
    Brush the dough with olive oil.
    Spread a thin layer of the prepared creamy sauce over the dough.
    Sprinkle mozzarella cheese evenly over the pizza.
    Distribute the roasted corn evenly across the pizza.
    Add jalapeño slices if using.
  • Bake: Transfer the pizza to the oven and bake for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly.
  • Finish and serve:
    Remove the pizza from the oven and sprinkle cotija cheese and fresh cilantro on top.
    Drizzle with extra lime juice for added freshness.
    Slice and enjoy!

Notes

  • You can use frozen or canned corn if fresh corn is unavailable—just roast it in a pan for extra flavor.
  • For a smoky kick, add a few dashes of hot sauce before serving.
