Ingredients
  

  • 500 gram chicken (boneless or bone-in)
  • 1 cup fresh cilantro (coriander leaves)
  • ½ cup fresh mint leaves
  • 3-4 green chilies (adjust to taste)
  • ½ cup yogurt
  • 1 tbsp lemon juice
  • 1 tsp ginger-garlic paste
  • ½ tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Water as needed

Instructions
 

  • In a blender, combine cilantro, mint, green chilies, yogurt, lemon juice, and ginger-garlic paste. Blend until you get a smooth paste.
  • Transfer the paste to a bowl and add turmeric powder, cumin powder, coriander powder, garam masala, and salt. Mix well.
  • Coat the chicken pieces with the green marinade and let it marinate for at least 30 minutes (or overnight for better flavor).
  • Heat oil in a pan over medium heat. Add the marinated chicken and cook for 10-15 minutes, stirring occasionally.
  • Cover and cook for another 10 minutes until the chicken is tender and fully cooked.
  • If needed, add a little water to adjust the consistency of the gravy.
  • Serve hot with rice, naan, or roti.

Notes

  • For a richer taste, add a splash of cream or coconut milk to the gravy.
  • Adjust spice levels according to your preference.
