Ingredients
  

  • 1 1/2 cups cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 1/4 cup milk
  • 1 Egg
  • 3 tbsp melted butter (plus extra for cooking)
  • 1 tsp vanilla extract (optional)

Instructions
 

  • In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  • In a separate bowl, beat the egg and mix in the milk and melted butter. Add vanilla extract if using.
  • Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing; lumps are okay.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
  • Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  • Repeat with the remaining batter. Serve warm with syrup, butter, or your favorite toppings.

Notes

  • For extra fluffiness, let the batter rest for 5 minutes before cooking.
  • Adjust the consistency by adding a splash of milk if the batter is too thick.
