- 1 1/2 cups cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tsp salt
- 1 tbsp granulated sugar
- 1 1/4 cup milk
- 1 Egg
- 3 tbsp melted butter (plus extra for cooking)
- 1 tsp vanilla extract (optional)
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl, beat the egg and mix in the milk and melted butter. Add vanilla extract if using.
Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing; lumps are okay.
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
Flip the pancake and cook for an additional 1-2 minutes until golden brown.
Repeat with the remaining batter. Serve warm with syrup, butter, or your favorite toppings.
