- 2 Denver steaks (6-8 oz each)
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 2 cloves garlic, minced
- 1 tsp smoked paprika (optional)
- 1 tbsp unsalted butter
- Fresh rosemary or thyme sprigs (optional)
- Lemon wedges (for serving)
Prepare the Steaks : Pat the Denver steaks dry with paper towels. Rub them with olive oil, then season generously with salt, pepper, and smoked paprika (if using). Heat the Pan : Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until it’s smoking hot. Sear the Steaks : Place the steaks in the pan and cook for 3-4 minutes per side for medium-rare. Avoid moving the steaks to ensure a good sear. Add Aromatics : In the last minute of cooking, add the butter, garlic, and herbs to the pan. Spoon the melted butter over the steaks to baste them. Check Doneness : Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium. Rest the Steaks : Transfer the steaks to a plate and let them rest for 5 minutes to allow the juices to redistribute. Serve : Slice against the grain and serve with lemon wedges and your favorite sides.
