Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 cup dill pickle juice (for marinating)
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (panko or regular)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • 1 egg
  • 2 tbsp olive oil or butter (for frying, if pan-frying)

Instructions
 

  • Marinate the Chicken: Place chicken breasts in a bowl or ziplock bag and pour in the dill pickle juice. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
  • Prepare the Coating: In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, and black pepper.
  • Coat the Chicken: Beat an egg in a separate bowl. Remove chicken from the marinade, dip into the egg, and then coat in the Parmesan mixture.
  • Cook the Chicken:
    Baking Method: Preheat the oven to 400°F (200°C). Place chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown and cooked through.
    Pan-Frying Method: Heat olive oil in a pan over medium heat. Cook chicken for 4-5 minutes per side until crispy and fully cooked.
  • Serve & Enjoy: Let the chicken rest for a few minutes before serving. Pair with a side salad, roasted vegetables, or mashed potatoes.

Notes

  • For extra crispiness, double-coat the chicken by repeating the egg and Parmesan mixture steps.
  • If you prefer a stronger pickle flavor, marinate the chicken longer.
