For the Dolmas
- 1 jar (16 ounces / 450 g) grape leaves in brine
- 1½ cups uncooked long-grain rice
- ½ cup extra-virgin olive oil
- ½ cup fresh parsley, finely chopped
- ¼ cup fresh dill, finely chopped
- ¼ cup fresh mint, finely chopped
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- ½ teaspoon salt, or to taste
- ½ teaspoon ground cumin, optional
- 2 cups vegetable broth or water
For Serving
- Fresh lemon wedges
- Extra-virgin olive oil
- Fresh parsley or dill
- Greek yogurt or tzatziki, optional
Remove the grape leaves from the jar and rinse them thoroughly under cool water to remove excess brine.
Bring a large pot of water to a gentle boil. Blanch the grape leaves for about 1–2 minutes, then transfer them to cold water. Drain and carefully separate the leaves.
Heat about 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and cook for approximately 4–5 minutes, until softened.
Remove the pan from the heat and stir in parsley, dill, mint, lemon juice, oregano, black pepper, salt, and cumin if using.
Place one grape leaf on a clean work surface with the shiny side facing down and the veins facing upward.
Fold the bottom of the leaf over the filling, fold both sides inward, and roll it firmly but gently into a small cylinder.
Arrange the stuffed grape leaves seam-side down in snug rows. Continue layering until all the dolmas are arranged.
Pour in enough vegetable broth or water to come almost halfway up the dolmas.
Place a heatproof plate upside down over the dolmas. This helps keep them securely in place while they cook.
Reduce the heat to low and cook for approximately 45–60 minutes, or until the rice is tender and the grape leaves are soft.
Turn off the heat and allow the dolmas to rest in the pot for about 15–20 minutes.Serve warm, at room temperature, or chilled.
