Ingredients

For the Vanilla Cake

  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup whole milk

For the Vanilla Frosting

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

For Decoration

  • ½ cup colorful candy dots or candy-coated chocolate pieces
  • 2 tablespoons rainbow sprinkles
  • Mini chocolate chips, optional

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper and lightly grease it.

Mix the Dry Ingredients

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Cream the Butter and Sugar

  • In a large bowl, beat the softened butter and sugar until light and fluffy, approximately 2–3 minutes.
Add the eggs one at a time, mixing well after each addition. Add the vanilla extract.

Combine the Batter

  • Add the dry ingredients to the butter mixture in two or three additions, alternating with the milk.
Mix just until combined. Avoid overmixing, as this can make the cake dense.

Bake the Cake

  • Pour the batter into the prepared pan and spread it evenly.
Bake for approximately 20–25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely.

Make the Frosting

  • Beat the softened butter until creamy.
Gradually add powdered sugar, followed by the heavy cream, vanilla extract, and salt.
Beat for another 2–3 minutes until the frosting becomes light and fluffy.

Cut the Cake

  • Once completely cool, cut or crumble the cake into small bite-sized pieces.
You can use a small round cookie cutter to create neat cake rounds or simply cut the cake into cubes.

Add the Dots

  • Finish each cup with colorful candy dots and rainbow sprinkles.
For an especially attractive presentation, use several different colors and arrange the candies evenly across the top.

Chill and Serve

  • Refrigerate the finished cake cups for at least 30 minutes before serving.
Serve chilled or allow them to sit at room temperature for a few minutes before eating.

Notes

  • Cool the cake completely before assembling so the frosting doesn't melt.
  • Don't overmix the batter, which can result in a dense cake.
  • Use clear cups to showcase the attractive layers.
  • Adjust the sweetness by reducing the amount of frosting if desired.
  • Candy dots can be replaced with M&M-style candies, sprinkles, or chopped chocolate.
  • Use homemade or boxed cake depending on how much time you have.
  • Keep the cups refrigerated if using buttercream frosting.
  • Assemble close to serving time for the freshest texture.
