Ingredients
  

For the Biscuit Crust

  • 2 cups (200 g) digestive biscuits or graham crackers, finely crushed
  • ½ cup (115 g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • Pinch of salt

For the Durian Puree

  • 1½ cups (300–350 g) ripe durian flesh, seeds removed
  • 1–2 tablespoons milk or coconut milk, if needed

For the Cheesecake Filling

  • 24 oz (680 g) full-fat cream cheese, softened
  • ¾ cup (150 g) granulated sugar
  • 3 large eggs, room temperature
  • 1 cup (240 g) sour cream
  • 1½ cups durian puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lime juice
  • 2 tablespoons cornstarch
  • ¼ teaspoon salt

Optional Topping

  • ½ cup fresh durian flesh
  • ½ cup whipped cream
  • Toasted coconut flakes
  • Thin slices of fresh mango
  • Powdered sugar, for dusting

Instructions
 

  • If using fresh durian, carefully remove the flesh from the shell and separate it from the large seeds.
    Use approximately 300–350 grams of edible durian flesh
  • Place the durian flesh in a blender or food processor.
    Blend until smooth and creamy.
    If the puree is too thick to blend easily, add 1–2 tablespoons of milk or coconut milk.
    Do not add too much liquid because the cheesecake filling should remain thick.
  • Measure approximately 1½ cups of smooth durian puree for the cheesecake.
    Reserve a small amount of durian puree if you want to decorate the finished cheesecake.
  • Place the digestive biscuits or graham crackers in a food processor.
    Process until they resemble fine crumbs.
    You can also place them in a sealed bag and crush them with a rolling pin.
  • Transfer the crumbs to a mixing bowl.
    Add melted butter, sugar, and a pinch of salt.
    Mix until the crumbs are evenly moistened and resemble wet sand.
  • Line the bottom of a 9-inch (23 cm) springform pan with parchment paper.
    Transfer the biscuit mixture to the pan.
    Press firmly and evenly across the bottom.
    Use the bottom of a glass or measuring cup to create a compact, level crust.
  • Preheat the oven to 350°F (175°C).
    Bake the crust for approximately 8–10 minutes.
    Remove from the oven and allow it to cool slightly.
    Reduce the oven temperature to 325°F (160°C).
  • Place the softened cream cheese in a large mixing bowl.
    Beat on low to medium speed until smooth and creamy.
    Avoid excessive whipping because incorporating too much air can cause the cheesecake to puff and crack during baking.
  • Gradually add the sugar.
    Beat just until incorporated.
    Scrape down the sides of the bowl as needed.
  • Add the durian puree.
    Mix gently until completely incorporated.
    The mixture should become smooth, thick, and fragrant.
  • Add the sour cream.
    Mix gently until combined.
    The sour cream contributes moisture and a pleasant tang that balances the rich durian.
  • Add the eggs one at a time.
    Mix on low speed after each addition, stopping as soon as the egg disappears into the batter.
    Do not overmix.
  • Add vanilla extract, lime juice, salt, and cornstarch.
    Mix gently until the batter is smooth.
    Scrape the bottom and sides of the bowl to ensure everything is evenly incorporated.
  • Pour the durian cheesecake batter over the slightly cooled crust.
    Gently smooth the surface with a spatula.
  • Tap the pan gently against the countertop several times.
    This helps bring larger air bubbles to the surface.
    If you see visible bubbles, pop them carefully with a toothpick.
  • Wrap the outside of the springform pan securely with two layers of heavy-duty aluminum foil.
    Place the cheesecake pan inside a larger roasting pan.
    Pour hot water into the roasting pan until it reaches approximately halfway up the sides of the cheesecake pan.
    The water bath provides gentle, even heat and helps reduce cracking.
  • Place the cheesecake in the preheated 325°F (160°C) oven.
    Bake for approximately 55–70 minutes.
    The edges should look set while the center should still have a gentle wobble.
    Do not wait for the center to become completely firm in the oven.
  • Turn off the oven when the cheesecake is finished.
    Leave the cheesecake inside with the oven door slightly open for approximately 30–45 minutes.
    This gradual cooling helps reduce the chance of sudden temperature changes causing cracks.
  • Remove the cheesecake from the oven and water bath.
    Carefully remove the foil.
    Allow the cheesecake to cool completely at room temperature.
  • Cover the cheesecake and refrigerate for at least 6 hours, preferably overnight.
    Chilling allows the filling to firm up and makes slicing much easier.
  • Run a thin knife around the edge of the cheesecake before carefully removing the springform ring.
    Transfer the cheesecake to a serving plate.
  • Decorate with small pieces of fresh durian flesh.
    For an elegant presentation, add a few small swirls of whipped cream and a light sprinkling of toasted coconut.
    Avoid adding too many toppings because the durian itself provides plenty of flavor.
  • Use a sharp knife to cut the cheesecake into slices.
    For clean cuts, dip the knife in hot water, wipe it dry, and slice.
    Repeat between cuts.
    Serve the cheesecake cold.

Notes

Use ripe durian: Fully ripe durian provides the sweetest and creamiest flavor.
Fresh or frozen: Frozen durian pulp can be used if fresh durian is unavailable. Thaw it completely and drain excess liquid.
Full-fat cream cheese: Full-fat cream cheese provides the richest texture and helps the cheesecake set properly.
Avoid overmixing: Excessive mixing can incorporate too much air and contribute to cracks.
Water bath: A water bath helps the cheesecake bake gently and evenly.
Center wobble: The center should still have a slight wobble when the cheesecake is removed from the oven.
Chilling: Do not rush the refrigeration stage because the cheesecake becomes firmer and easier to slice after several hours.
Durian aroma: Durian has a naturally strong aroma, so keep the cheesecake refrigerated in a tightly covered container.
