Ingredients
  

  • 1 pound breakfast sausage
  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 5 cups frozen hash browns or diced cooked potatoes
  • 10 large eggs
  • ½ cup whole milk
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2½ cups shredded sharp cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • Butter or cooking spray for greasing the Dutch oven

Instructions
 

  • Prepare a campfire and allow it to burn down until you have a bed of hot coals. If cooking indoors, preheat the oven to 375°F (190°C).
  • Grease a 12-inch Dutch oven with butter or cooking spray.
  • Cook the chopped bacon until crispy. Remove and set aside.
  • Cook the breakfast sausage in the same Dutch oven until browned.
  • Add the diced onion and bell peppers and sauté for about 5 minutes until softened.
  • Stir in the hash browns or cooked potatoes.
  • Season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  • Cook the potato mixture for 8–10 minutes until lightly browned.
  • Whisk together the eggs and milk in a large bowl.
  • Pour the egg mixture evenly over the potato mixture.
  • Sprinkle the cooked bacon and shredded cheddar cheese over the top.
  • Cover the Dutch oven with its lid and cook over campfire coals (or bake in the oven) for 30–35 minutes, until the eggs are fully set and the cheese is melted and bubbly.
  • Allow the casserole to rest for 5–10 minutes before serving.
  • Garnish with chopped parsley and serve hot.
