Ingredients
  

Meat

  • 1 pound breakfast sausage
  • 8 slices bacon, chopped

Potatoes

  • 1 package (30 oz) frozen shredded hash browns (thawed)
  • or 5 cups diced cooked potatoes

Eggs

  • 12 large eggs
  • ¼ cup milk
  • Salt to taste
  • Black pepper to taste

Cheese

  • 3 cups shredded sharp cheddar cheese

Vegetables (Optional)

  • 1 onion, diced
  • 1 green bell pepper, diced
  • ½ cup chopped green onions

Instructions
 

  • Preheat the Dutch oven using hot charcoal or place it over medium campfire heat.
  • Cook the chopped bacon until crispy. Remove and reserve a little bacon grease.
  • Brown the breakfast sausage until fully cooked. Add onions and bell peppers if using.
  • Spread the hash browns evenly into the Dutch oven and cook until lightly browned.
  • Whisk together eggs, milk, salt, pepper, garlic powder, onion powder, and paprika.
  • Layer the sausage, bacon, potatoes, and half of the cheese.
  • Pour the egg mixture evenly over the ingredients.
  • Top with the remaining cheese.
  • Cover the Dutch oven and bake using charcoal (approximately 16 briquettes on top and 8 underneath) for 30–40 minutes, or until the eggs are fully set.
  • Garnish with chopped green onions and serve hot.
