Rice

  • 2 cups cooked jasmine rice
  • 1 teaspoon sesame oil

Protein

  • 1 pound boneless chicken breast, cut into bite-sized pieces (or shrimp)

  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • Salt and black pepper to taste

Dynamite Sauce

  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon lime juice

Garnishes

  • Sesame seeds

Instructions
 

  • Cook the jasmine rice according to the package instructions and toss it with sesame oil. Keep warm.
  • Season the chicken with salt and black pepper.
  • Coat each piece in flour, dip into the beaten eggs, then coat with panko breadcrumbs.
  • Heat vegetable oil in a deep skillet over medium-high heat.
  • Fry the chicken until golden brown and cooked through, about 5–6 minutes. Drain on paper towels.
  • In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, soy sauce, sesame oil, honey, and lime juice until smooth.
  • Place a serving of warm rice into each bowl.
  • Arrange the crispy chicken, shredded carrots, cucumber, and avocado over the rice.
  • Drizzle generously with the dynamite sauce.
  • Garnish with green onions, sesame seeds, cilantro, and lime wedges before serving.
