  • 2 cups frozen hash brown potatoes
  • 8 large eggs
  • 1½ cups milk
  • 1½ cups shredded cheddar cheese
  • ½ cup diced onion
  • ½ cup diced bell pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons chopped green onions (optional garnish)

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Cook meat: In a skillet over medium heat, cook sausage until browned. If using ham, skip this step.
  • Prepare base: Spread hash browns evenly in the baking dish.
  • Add meat and vegetables: Sprinkle cooked sausage (or ham), onion, and bell pepper over the potatoes.
  • Add cheese: Sprinkle shredded cheddar cheese evenly over the mixture.
  • Whisk eggs: In a large bowl, whisk together eggs, milk, garlic powder, salt, pepper, and paprika.
  • Pour mixture: Pour the egg mixture evenly over the ingredients in the baking dish.
  • Bake: Bake for 35–40 minutes until the eggs are set and the top is lightly golden.
  • Serve: Let the casserole cool for 5 minutes and garnish with green onions before serving.
