Ingredients
  

For the Ramen

  • 4 portions ramen noodles
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 medium carrot, thinly sliced
  • 150 g mushrooms, sliced
  • 1 small bok choy, chopped
  • ½ cup sweet corn
  • 4 green onions, sliced

For the Broth

  • 5 cups vegetable broth
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon miso paste
  • 1 teaspoon maple syrup or brown sugar
  • ½ teaspoon black pepper
  • ½ teaspoon chili flakes, optional

For the Toppings

  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Chili oil, to taste
  • Nori strips, optional
  • Fresh cilantro, optional
  • Soft-boiled eggs, optional
  • Crispy tofu, optional

Instructions

  • Wash and prepare all the vegetables before cooking. Slice the mushrooms, carrot, bok choy, and green onions. Mince the garlic and grate the fresh ginger.
    Preparing everything beforehand makes the cooking process quick and smooth.

Sauté the Aromatics

  • Heat vegetable oil in a large pot over medium heat. Add the minced garlic and grated ginger.
    Cook for about 30–60 seconds until fragrant, taking care not to burn the garlic.

Add the Vegetables

  • Add the sliced carrots and mushrooms. Stir-fry for 2–3 minutes until the mushrooms begin to soften.
    Add the chopped bok choy and corn and cook for another minute.

Build the Broth

  • Pour the vegetable broth into the pot. Add soy sauce, sesame oil, rice vinegar, miso paste, maple syrup or brown sugar, black pepper, and chili flakes if using.
    Stir well to dissolve the miso

Cook the Ramen Noodles

  • Cook the ramen noodles according to the package instructions.
    If the noodles are cooked separately, drain them well before adding them to serving bowls. This helps keep the broth from becoming excessively starchy.

Combine

  • Divide the cooked ramen noodles among four large bowls.
    Ladle the hot vegetable broth and vegetables over the noodles.

Finish and Serve

  • For extra flavor, add a small drizzle of sesame oil or chili oil just before serving.
    Serve immediately while the ramen is steaming hot.

Notes

  • Choose good-quality ramen noodles: Fresh or dried ramen noodles can both work well.
  • Do not overcook the noodles: Overcooked ramen can become soft and lose its pleasant chewy texture.
  • Use fresh ginger: Fresh ginger provides a brighter and more aromatic flavor than powdered ginger.
  • Dissolve the miso properly: Mix it thoroughly into the hot broth so it distributes evenly.
  • Adjust the soy sauce: Different soy sauces vary significantly in saltiness, so season according to taste.
