- 4 cup chicken broth
- 2 cup cooked shredded chicken (rotisserie works great)
- 1 cup salsa (mild, medium, or hot – your choice)
- 1 cup frozen or canned corn
- 1 cup tortilla strips or crushed tortilla chips
- Optional toppings: avocado, shredded cheese, sour cream, lime wedges, cilantro
Combine ingredients: In a large pot, add chicken broth, shredded chicken, salsa, and corn. Stir to combine.
Simmer: Bring to a boil over medium heat, then reduce heat and simmer for 15–20 minutes.
Add tortilla strips: Just before serving, stir in the tortilla strips or chips. Or, top each bowl individually to maintain crunch.
Serve: Ladle into bowls and garnish with desired toppings like cheese, avocado, or a squeeze of lime.
