Ingredients

  • 5 medium ripe Roma tomatoes, halved
  • 1 medium white onion, quartered
  • 2 jalapeño peppers
  • 4 garlic cloves
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 fresh lime
  • ¼ cup fresh cilantro leaves

Instructions

  • Preheat the air fryer to 390°F (200°C) for 3 minutes.
  • Place the tomatoes, onion, jalapeños, and garlic in a bowl. Drizzle with olive oil and season with salt and black pepper.
  • Arrange the vegetables in a single layer in the air fryer basket.
  • Air fry for 10–12 minutes, shaking the basket halfway through, until the vegetables are softened and lightly charred.
  • Allow the vegetables to cool for about 5 minutes.
  • Transfer the roasted vegetables to a food processor or blender.
  • Add the cilantro, lime juice, cumin, and sugar (if using).
  • Pulse until the salsa reaches your preferred consistency, either chunky or smooth.
  • Taste and adjust the seasoning with additional salt or lime juice if needed.
  • Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.

Notes

  • Roma tomatoes produce a thicker salsa with less excess liquid.
  • Roast longer for a deeper smoky flavor.
  • Remove jalapeño seeds for a milder salsa.
  • Add extra peppers for more heat.
  • Blend less for a chunkier texture.
  • Fresh lime juice gives the best flavor.
  • Refrigerate leftovers in an airtight container for up to 5 days.
  • The flavor improves after chilling for a few hours.
