Ingredients
  

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup apricot preserves or jam
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Fresh parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, whisk apricot preserves, soy sauce, mustard, garlic powder, salt, and pepper.
  • Place chicken in a baking dish and coat with the apricot mixture.
  • Bake uncovered for 35–40 minutes until chicken is cooked through and glaze caramelizes.
  • Garnish with parsley before serving.

  • Chicken thighs stay juicier than breasts.
  • Fresh apricots can be cooked down for a natural glaze.
  • Add a splash of vinegar for extra tanginess.
