Ingredients
  

For the Casserole

  • 1 can (16 ounces) refrigerated buttermilk biscuits
  • 1 pound breakfast sausage
  • 8 large eggs
  • ½ cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika

For the Country Gravy

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2½ cups whole milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F (190°C).
    Lightly grease a 9×13-inch baking dish with butter or nonstick cooking spray.

Prepare the Biscuits

  • Open the refrigerated biscuit dough.
    Cut each biscuit into approximately 4 pieces.
    Arrange the biscuit pieces evenly across the bottom of the prepared baking dish.
    Set aside.

Cook the Sausage

  • Heat a large skillet over medium heat.
    Add the breakfast sausage and cook for approximately 7–9 minutes, breaking it into small crumbles as it cooks.
    Cook until browned and completely cooked through.
    Drain excess grease if necessary.
    Set aside.

Make the Country Gravy

  • Melt the butter in a saucepan over medium heat.
    Whisk in the flour.
    Cook for approximately 1 minute.
    Gradually add the milk while whisking continuously.
    Continue cooking for approximately 4–6 minutes, until the gravy thickens.
    Add salt, black pepper, garlic powder, and onion powder.
    Taste and adjust the seasoning.

Layer the Casserole

  • Spread the cooked sausage evenly over the biscuit pieces.
    Pour the seasoned egg mixture over the sausage and biscuits.
    Sprinkle the cheddar and Monterey Jack cheese evenly over the top.
    Pour the warm country gravy over the casserole, distributing it as evenly as possible.

Rest

  • Remove the casserole from the oven.
    Allow it to rest for 5–10 minutes before slicing.
    This allows the layers to settle and makes serving easier.

Garnish and Serve

  • Sprinkle with chopped green onions or fresh parsley.
    Add freshly cracked black pepper or a small amount of red pepper flakes if desired.
    Serve warm.
