Ingredients

For the Beef

  • 1½ pounds (700 g) thinly sliced beef, such as ribeye or sirloin
  • 1 tablespoon neutral cooking oil

For the Bulgogi Marinade

  • ¼ cup soy sauce
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ½ small Asian pear or sweet apple, finely grated
  • ½ small onion, finely grated
  • 1 tablespoon toasted sesame seeds
  • 2 scallions, thinly sliced
  • ¼ teaspoon black pepper

For Serving

  • Steamed rice
  • Lettuce leaves
  • Extra sliced scallions
  • Toasted sesame seeds
  • Kimchi or other Korean side dishes

Instructions

Slice the Beef

  • If your beef is not already thinly sliced, place it in the freezer for approximately 20–30 minutes.
This will make it easier to slice thinly.
Cut the beef across the grain into thin strips.

Prepare the Marinade

  • In a large bowl, combine the soy sauce, brown sugar or honey, sesame oil, garlic, ginger, grated Asian pear or apple, grated onion, water, sesame seeds, scallions, and black pepper.
Mix well until the ingredients are thoroughly combined.

Marinate the Beef

  • Add the thinly sliced beef to the bowl.
Toss thoroughly until every piece is coated with the marinade.

Refrigerate

  • Cover the bowl and refrigerate for at least 30 minutes.
For deeper flavor, allow the beef to marinate for up to 4 hours.

Heat the Pan

  • Place a large skillet, grill pan, or wok over medium-high to high heat.
Add a small amount of neutral cooking oil if needed.

Caramelize the Beef

  • Cook for approximately 2–4 minutes, stirring occasionally.
The beef should become browned and lightly caramelized around the edges.

Check for Doneness

  • Thinly sliced beef cooks quickly.
Continue cooking until the beef reaches your preferred level of doneness and the marinade has formed a flavorful glaze.

Garnish

  • Remove the cooked Bulgogi from the heat.
Sprinkle with additional toasted sesame seeds and sliced scallions.

Serve

  • Serve the Easy Bulgogi immediately with warm steamed rice.
You can also enjoy it in lettuce wraps with kimchi and other Korean-style side dishes.

Notes

  • Beef selection: Tender cuts such as ribeye or sirloin work especially well.
  • Thin slicing: Thin slices help the beef cook quickly and absorb the marinade.
  • Fruit: Asian pear or sweet apple adds natural sweetness and tenderness.
  • Marinating: Even 30 minutes provides good flavor, but longer marination creates a deeper taste.
  • High heat: High heat helps create delicious caramelization.
  • Crowding: Cook in batches to prevent the beef from steaming.
  • Sweet marinade: Watch carefully because sugar and honey can burn.
  • Serving: Bulgogi tastes best when served hot and freshly cooked.
