Ingredients
  

Chicken and Sausage

  • 1½ pounds (680 g) boneless, skinless chicken thighs
  • 8 ounces (225 g) smoked sausage, sliced
  • 2 tablespoons olive oil or vegetable oil

Vegetables

  • 1 medium yellow onion, finely chopped
  • 2 celery stalks, finely chopped
  • 3 cloves garlic, minced

Rice and Broth

  • 2 cups long-grain white rice, rinsed
  • 5 cups chicken broth
  • 1 bay leaf

Seasonings

  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • ½ teaspoon onion powder
  • 2 tablespoons chopped fresh parsley

Instructions
 

Prepare the Ingredients

  • Cut the chicken thighs into large bite-sized pieces.
    Slice the smoked sausage into rounds and finely chop the onion and celery. Mince the garlic.
    Rinse the rice under cool water until the water runs mostly clear. Drain well.

Brown the Sausage

  • Heat a large heavy-bottomed pot or Dutch oven over medium heat.
    Add the sliced sausage and cook for about 3–4 minutes, turning occasionally, until lightly browned.
    Transfer the sausage to a plate and leave the flavorful drippings in the pot.

Brown the Chicken

  • Add the oil if the pot looks dry.
    Season the chicken lightly with salt, pepper, and paprika.
    Add the chicken to the pot and cook for approximately 4–5 minutes, stirring occasionally, until the outside is lightly browned.
    The chicken does not need to be completely cooked at this stage.

Sauté the Vegetables

  • Add the chopped onion and celery.
    Cook for approximately 4 minutes until the vegetables begin to soften.
    Add the minced garlic and cook for another 30–60 seconds until fragrant.

Add the Seasonings

  • Stir in the thyme, onion powder, black pepper, and optional cayenne pepper.
    Mix well so the spices coat the chicken and vegetables.

Add the Rice

  • Add the rinsed and drained rice to the pot.
    Stir gently for about 1 minute, allowing the rice to become coated with the flavorful mixture.

Add the Broth

  • Pour in the chicken broth.
    Add the bay leaf and return the browned sausage to the pot.
    Stir everything together once.

Simmer

  • Bring the mixture to a gentle boil.
    Reduce the heat to low and cover the pot tightly with a lid.
    Simmer for approximately 20–25 minutes, or until the rice is tender and most of the liquid has been absorbed.
    Avoid repeatedly opening the lid because this allows steam to escape and can interfere with the rice cooking evenly.

Rest the Chicken Bog

  • Turn off the heat and leave the pot covered for about 10 minutes.
    This resting period allows the rice to finish absorbing the remaining moisture and helps the flavors settle.

Finish and Serve

  • Remove the bay leaf.
    Check the seasoning and add additional salt or black pepper if needed.
    Gently fluff the rice with a fork and sprinkle with fresh parsley.
    Serve hot with your favorite Southern-inspired side dishes.

Notes

  • Chicken thighs work especially well: They remain tender and flavorful during simmering.
  • Use long-grain rice: It provides a pleasant texture and works well for this style of dish.
  • Rinse the rice: Removing excess surface starch helps prevent the dish from becoming unnecessarily sticky.
