- 2 boneless, skinless chicken breasts (sliced into strips)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 small onion (sliced)
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
- 8 small flour tortillas
- Optional toppings: sour cream, guacamole, salsa, shredded cheese
In a large bowl, mix the chicken strips with chili powder, paprika, cumin, garlic powder, onion powder, salt, black pepper, and lime juice. Let it marinate for 10 minutes.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and cook for 5-6 minutes until fully cooked.
Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced bell peppers and onions. Sauté for 4-5 minutes until softened.
Return the cooked chicken to the skillet and mix well with the vegetables.
Warm the tortillas in a dry pan or microwave for a few seconds.
Serve the chicken and vegetables in tortillas with your favorite toppings.
