- 2 boneless, skinless chicken breasts (sliced into thin strips)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 small onion (sliced)
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- Juice of 1 lime
- 8 small flour tortillas
- Optional toppings: guacamole, sour cream, salsa, shredded cheese, fresh cilantro
In a bowl, combine olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper.
Add the sliced chicken to the marinade and mix well. Let it sit for at least 10 minutes.
Heat a large skillet over medium-high heat and cook the chicken for 5-6 minutes until golden brown and fully cooked.
Remove the chicken and set aside. In the same skillet, sauté the sliced onions and bell peppers for about 3-4 minutes until they are slightly softened.
Return the chicken to the skillet and mix well with the peppers and onions.
Serve hot with warm flour tortillas and your favorite toppings.
