- 1 pound boneless, skinless chicken breasts, cubed
- 2 cups orzo pasta
- 3 cups chicken broth
- 1 cup heavy cream
- 1 lemon (zested and juiced)
- 2 tablespoons capers
- 3 garlic cloves, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- ½ cup Parmesan cheese, grated
- Fresh parsley for garnish
Preheat the oven to 375°F (190°C). Grease a medium casserole dish.
Heat olive oil in a large skillet. Cook chicken until golden brown. Remove and set aside.
