Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cubed
  • 2 cups orzo pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 lemon (zested and juiced)
  • 2 tablespoons capers
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • ½ cup Parmesan cheese, grated
  • Fresh parsley for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a medium casserole dish.
  • Heat olive oil in a large skillet. Cook chicken until golden brown. Remove and set aside.
  • Add garlic to the pan and sauté until fragrant. Stir in orzo and toast lightly.
  • Pour in chicken broth, cream, lemon juice, and zest. Stir well.
  • Add capers, Italian seasoning, and chicken. Mix and simmer for a few minutes.
  • Transfer to the prepared casserole dish and bake uncovered for 25–30 minutes.
  • Sprinkle Parmesan over the top and bake for another 5 minutes.
  • Garnish with parsley and serve warm.
