Ingredients
  

  • 2 large cucumbers, sliced
  • 2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • 1 tsp dried oregano or fresh basil
  • Salt and pepper to taste
  • 1/4 cup feta cheese (optional)

Instructions
 

  • In a large bowl, combine sliced cucumbers, cherry tomatoes, and red onion.
  • In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), oregano, salt, and pepper.
  • Drizzle the dressing over the vegetables and toss gently to combine.
  • Let the salad sit for about 5 minutes to allow flavors to meld.
  • Sprinkle with feta cheese if using and serve immediately.

  • For extra flavor, add fresh herbs like parsley or dill.
  • Use English cucumbers for a less watery salad.
