Ingredients
  

  • 8 flour or corn tortillas
  • 2 cups cooked chicken, beef, or beans
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 small onion, diced
  • 2 cups enchilada sauce (red or green)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro and sour cream for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet, sauté onion, and mix in protein of choice with chili powder, cumin, salt, and pepper.
  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Fill tortillas with meat mixture and cheese, roll tightly, and place seam-side down in the dish.
  • Cover with remaining enchilada sauce and sprinkle with cheese.
  • Bake for 20–25 minutes until hot and bubbly.
  • Garnish with cilantro and serve with sour cream.

  • Corn tortillas give a more authentic flavour.
  • Chicken, beef, or beans make great filling choices.
  • Homemade enchilada sauce elevates the dish.
  • Cheese should melt and bubble on top.
  • Leftovers taste even better the next day.
