- 8 flour or corn tortillas
- 2 cups cooked chicken, beef, or beans
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 small onion, diced
- 2 cups enchilada sauce (red or green)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro and sour cream for garnish
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet, sauté onion, and mix in protein of choice with chili powder, cumin, salt, and pepper.
Spread a thin layer of enchilada sauce on the bottom of a baking dish.
Fill tortillas with meat mixture and cheese, roll tightly, and place seam-side down in the dish.
Cover with remaining enchilada sauce and sprinkle with cheese.
Bake for 20–25 minutes until hot and bubbly.
Garnish with cilantro and serve with sour cream.
