Ingredients
  

  • 8 large eggs
  • ¼ cup milk or cream
  • 1 cup chopped vegetables (bell peppers, spinach, onions, mushrooms)
  • ½ cup shredded cheese (cheddar, mozzarella, or feta)
  • ½ cup cooked meat (optional: bacon, sausage, ham)
  • 2 tablespoons olive oil or butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Whisk eggs, milk, salt, and pepper in a bowl until well combined.
  • Heat olive oil in an oven-safe skillet over medium heat.
  • Sauté vegetables until softened (about 3–4 minutes).
  • Add cooked meat if using.
  • Pour egg mixture evenly over vegetables.
  • Sprinkle cheese on top.
  • Transfer skillet to oven and bake 15–20 minutes until center is set.

Notes

  • Use an oven-safe skillet (cast iron works best).
  • Do not overbake to keep it moist.
  • Let it rest before slicing.
  • Use fresh vegetables for best flavour.
  • Drain excess liquid from vegetables.
  • Whole milk adds creaminess.
