Ingredients
  

  • 400g fresh scallops (patted dry)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic (minced)
  • 2 tablespoons lemon juice
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions
 

  • Pat the scallops dry using paper towels (important for a good sear).
  • Season both sides with salt and pepper.
  • Heat olive oil and butter in a pan over medium-high heat.
  • Place scallops in the pan without overcrowding.
  • Sear for 2–3 minutes on each side until golden brown.
  • Remove scallops and set aside.
  • In the same pan, add garlic and sauté for 30 seconds.
  • Pour in lemon juice and stir well.
  • Return scallops to the pan and toss gently.
  • Garnish with parsley and serve immediately.
