Easy Hobo Casserole

- 1 lb ground beef
- 1 small onion, diced
- 3 medium potatoes, thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
In a skillet, heat olive oil over medium heat and sauté onions until translucent.
Add ground beef, garlic powder, salt, and black pepper, and cook until browned. Drain excess grease.
In a small bowl, mix the cream of mushroom soup with milk until smooth.
Layer half of the sliced potatoes in the baking dish, followed by half of the ground beef mixture.
Pour half of the soup mixture over the layers and sprinkle with some cheese.
Repeat the layers, finishing with cheese on top.
Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
Let cool for 10 minutes before serving.
