Easy Hobo Casserole

Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 medium potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  • Add ground beef, garlic powder, salt, and black pepper, and cook until browned. Drain excess grease.
  • In a small bowl, mix the cream of mushroom soup with milk until smooth.
  • Layer half of the sliced potatoes in the baking dish, followed by half of the ground beef mixture.
  • Pour half of the soup mixture over the layers and sprinkle with some cheese.
  • Repeat the layers, finishing with cheese on top.
  • Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
  • Let cool for 10 minutes before serving.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Add extra vegetables like bell peppers or carrots for more nutrition.
