For the Lamb Curry
- 2 pounds lamb shoulder or leg, cut into bite-sized pieces
- 2 tablespoons vegetable oil or neutral cooking oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 medium tomatoes, finely chopped, or 1 cup crushed tomatoes
- 1 green chili, finely chopped, optional
- 1 cup plain yogurt, preferably full-fat
- 1½ teaspoons ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon Kashmiri chili powder or mild chili powder
- ½ teaspoon red chili powder, optional
- 1 teaspoon salt, or to taste
- 1½ cups water or low-sodium broth
- 1 tablespoon lemon juice
Prepare the Lamb
Pat the lamb pieces dry with paper towels. Trim away excess surface fat while leaving enough fat for flavor and tenderness.If desired, season the lamb lightly with salt and a small amount of turmeric before beginning the curry.
Brown the Aromatics
Heat the oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.Add the optional whole spices and sauté for approximately 30 seconds until fragrant.Add the chopped onions and cook for 7–10 minutes, stirring regularly, until softened and golden brown.
Add Ginger and Garlic
Add the minced garlic, grated ginger, and chopped green chili.Cook for approximately 1–2 minutes until fragrant. Avoid burning the garlic because it can make the curry taste bitter.
Build the Spice Base
Reduce the heat to medium.Add cumin, coriander, turmeric, Kashmiri chili powder, and salt. Stir continuously for about 30 seconds.Add a small splash of water if the spices begin sticking to the bottom of the pot.
Add the Lamb
Add the lamb pieces and stir thoroughly so every piece is coated with the aromatic spice mixture.Cook uncovered for 5–7 minutes, stirring occasionally, allowing the lamb to lightly brown and absorb the spices.
Simmer the Curry
Add the water or broth and stir well.Bring the curry to a gentle simmer. Cover the pot and cook over low heat for approximately 60–75 minutes, or until the lamb is fork-tender.Stir occasionally and add a little extra water if the gravy becomes too thick before the lamb is tender.
Finish the Curry
Once the lamb is tender, stir in the garam masala and lemon juice.Taste and adjust the salt and chili level.Simmer uncovered for another 5–10 minutes if you prefer a thicker gravy.
Garnish and Serve
Turn off the heat and sprinkle generously with fresh chopped cilantro.Allow the curry to rest for 5–10 minutes before serving. This gives the flavors time to settle and the gravy to thicken slightly.Serve hot with basmati rice, jeera rice, naan, roti, paratha, or warm Indian flatbread.
