Ingredients
  

  • 500 g pumpkin, peeled and cut into cubes
  • 2 tablespoons cooking oil
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • ½ teaspoon cumin seeds
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • ½ cup water
  • 1 tablespoon chopped coriander leaves
  • 6–8 curry leaves

Instructions
 

Prepare the Pumpkin

  • Wash, peel, remove the seeds, and cut the pumpkin into medium-sized cubes. Try to keep the pieces similar in size so they cook evenly.

Start the Tempering

  • Heat oil in a wide pan over medium heat. Add mustard seeds and let them crackle. Add cumin seeds and curry leaves.

 Sauté the Aromatics

  • Add chopped onion and green chilies. Sauté until the onion becomes soft and lightly golden. Add ginger-garlic paste and cook for another minute.

Add Tomatoes and Spices

  • Add chopped tomatoes and cook until they become soft and mushy. Add turmeric, red chili powder, coriander powder, cumin powder, and salt. Mix well.

Cook the Pumpkin

  • Add the pumpkin cubes and gently mix until they are coated with the masala. Pour in about ½ cup water and cover the pan.

Finish the Curry

  • Add garam masala and mix gently. Cook uncovered for another 2–3 minutes so excess moisture evaporates.

Garnish and Serve

  • Turn off the heat and garnish with fresh coriander leaves. Serve hot with rice, chapati, roti, or dosa.

  • Choose a firm, ripe pumpkin for the best flavor and texture.
  • Cut the pumpkin into evenly sized cubes.
  • Avoid adding too much water because pumpkin releases moisture while cooking.
  • Adjust chili powder according to your preferred spice level.
  • For a sweeter curry, add a small amount of jaggery.
  • For a tangier version, add amchur powder or a little tamarind.
  • Do not overcook the pumpkin, or it may become mushy.
  • Leftover curry can be refrigerated and reheated the next day.
